Roasted chickpea & cauliflower salad with honey dijon dressing

Our lettuces are giving us big returns, so much so that I decided to get a bit creative with our salad last night since we are eating them everyday. This salad is a combination of warm and cool veggies, a little spicy heat from the chickpeas and a refreshing tangy-ness from the dressing. I had just mixed a batch of my homemade Honey Dijon Mustard dressing, so right off the bat I replaced the tahini dressing but of course you don't have to. You then prepare the salad as shown on the web link. I added my organic greens along with the parsley (and with a few other veggies I had in the fridge already) and tossed it all together. It will be a party in your mouth, I promise!

I also found this savory biscuit recipe in my internet travels. I tend to be a rolled biscuit person since that is how my gramma taught me, but this drop biscuit recipe sounded so easy and tasty that I had to try it out...https://www.budgetbytes.com/2012/05/rosemary-pepper-drop-biscuits/. OMG! They were the perfect side item. I doubled the rosemary, cracked pepper and salt that the recipe called for since we like our spices and it did not disappoint. I also sprinkled cracked pepper generously over the tops of the biscuits for looks and even more peppery goodness...also a good call. The only thing I would change the next time I make these scrumptious biscuits will be to use fresh rosemary from the garden rather than the dry spice I did use. Fresh beats dry spice almost every time. Give it a try; I think you will love it.

Honey Dijon Mustard dressing

1/2 c. mayonnaise

2 T. honey

2 T. yellow mustard

1 T. dijon mustard

1/2 T. lemon juice

Mix together and chill.
